I don't know what brought it to mind but in Texas, at least the Ft. Worth area, there is a New Years Eve staple that sounds a bit odd but is awesome.
They call it Mexican corn bread. Make your corn bread batter and put half in a baking dish. Put a layer of taco style ground beef and then the rest of the batter and bake. While this is going on cook up some black eyed peas and add whatever spices you want for some 'heat'. To serve put a chunk of the corn bread in a bowl and cover with the black eyed peas. It is surprisingly awesome. I'm not much of a corn bread person but this stuff is really good.
LOL! Now the question is if I'll remember this when I go grocery shopping Friday...
