I always open Outlook/contacts and then word over the top of it to do envelopes. I click on envelopes and then open the list of addresses by using the little book at the top of the window.

Some of the addresses show exactly as entered, a ficiticious sample is below. I want the post code to be at the bottom every time. It always was in Office 2000.

Joe Bloggs
42 Black Avenue
Handsworth
Birmingham
West Midands
B56 7JY

Another willl open as below, with the post code NOT on the bottom line, even though both entries have been saved the same way in Outllook/addresses.

Joe Bloggs
42 Black Avenue
Handsworth
Birmingham B56 7JY
West Midlands

Anyone know why please?

I don't know why, but do want to note that the address display for Contacts in Outlook has all of the address fields grouped in a "Home Address" "Business Address" and "Other Address"
It may be storing the information as street, city, province, postal code, etc, but I don't think so. I think that the mail merge function is parsing those details out of the larger single address field.
The records where the postal code appears like you second example, how does the address appear in that Contact in Outlook?

I always enter them as the first example above. Some print like that but others print as the second example. I have tried deleting the offending ones and re-entering them but they still will not print as I want with the post code last.
