I was just sitting out front of my apartments talking to one of the ladies that live here about hunting. Both she and her son hunt.

Anyway I LOVE venison chili with about half venison and half beef. I mentioned that, while I don't hunt, I needed to make friends with someone that did so I could make some chili. She asked me how much ground venison I'd need and I said, to fill my 8-quart crock pot, about 1.5 pounds. She said that she did 1 pound packages before putting in her chest freezer and asked if 2 pounds would be OK. I now have 2 pounds of venison in my freezer and she refused any payment. :) Of course I'll give her some of the chili. OH! I also happen to have a two pound bag of small dried red beans sitting in my pantry. Of course I won't use all of them but the chili will be made with them instead of canned kidney beans. I'll get a couple of ham hocks and make red beans and rice with the rest of the beans. LOL! I see some really good comfort food eating in my future. :mrgreen:

As an added bonus I can save some of the venison to mix with beef for a couple of burgers. If I save half a pound, and add a half pound of beef, I'll get two half pound burgers.

Right now she is waiting for her son to get back from buffalo hunting. She said that, if he did well, she will give me some of that too. I've actually never had buffalo even though the local grocery stores sell it. I told her that, if I wanted to try buffalo, I could just get some in a store. LOL! She told me that I was stupid. ;) Apparently what the stores sell is grain fed on a farm and you might as well have cow. She said that wild buffalo has a totally different taste. I can understand that being the case.

LOL! I think that I have a new best friend. :mrgreen:

The venison chili turned out pretty decent. :) It is funny that as to taste you probably would not know that it was half venison as to the meat due to all the spices. I used half venison and half 90/7% lean ground beef. The thing that sets it apart is the texture. I can only guess but figure that the rendered fat/juices from the venison is the cause. The thing is that it is very 'silky' as to the feel of the sauce on the tongue. Even though there is none it is like there is a lot of butter involved. Venison is VERY lean yet the browning of the venison renders more 'drippings' than the beef. I brown the beef in the renderings from the venison.

I don't know how to exactly describe. If you have had a decent bowl you know what I mean. ;)

I can't really imagine what it would be like, I've never had venison and hubby is not a meat eater, he's not vegetarian he just wasn't brought up eating a lot of meat. It's been many years since I had beef as I don't buy it now the kids have left.

It does sound delicious you way you described it though Jay.
